I first had this delicious summer salad a few years ago when I went to some friends for dinner (thank you Ethel S.)! She served it with chicken (with which it pairs very well).
I have tried it with spinach also, but prefer it with the Romaine.
Ingredients:
1 Romaine lettuce, torn (you can also use spinach, or a combination of both)
1 med. Red Onion
1 pint fresh Strawberries, sliced
Dressing: (best made day ahead)
1/4 cup milk
1/2 cup mayonnaise
2 tblsp Vinegar
2 tbslp Poppy seeds
Stir or blend until smooth, toss with salad
