Salade d'Amour
One taste of this salad and you'll know why it has it's name! (Salad of Love) (or maybe it's an aphrodisiac!)
This recipe was given to me by an old friend in 1979-80, and I have been making it ever since (I've even become famous for it in my circle of friends!) I have never met a person who did not love it!
It is almost a meal in itself (served with a nice fresh baguette), but if you would prefer it as a side, we find it pairs really well with a Cheese Fondue.
Ingredients: (4 lg servings)
1 cup cooked Rice
1 package Spinach, shredded
2 cups Bean Sprouts
1 cup Mushrooms, sliced
1/2 cup each: Celery, Red pepper, & Green pepper, cut in pieces
Salt & Pepper to taste
Dressing: (best made day ahead)
2/3 cup canola or vegetable Oil
1/3 cup Soy sauce
Combine salad ingredients in large bowl. Add dressing and mix about 15-30mins before serving. Best at room temperature.
Per 1 cup serving: 114 calories, 10g fat, 6g carbs, 3g fiber, 0 chol, 3g protein, 280mg sodium
