Mole


Who has tried it? Who loves it? Who has made it? It might seem like a long list of ingredients and a lot of work, but it is SO worth it! Especially poured over a few Chicken Enchiladas!

Ingredients:
1 small Onion, quartered
1 clove Garlic
1 cup Almond butter
1 cup Water
1/2 cup Chicken broth
1/2 cup diced Tomatoes
1 slice soft Sandwich Bread
1 tblsp Hot sauce
1n tblsp Cocoa powder
1 tsp Chili powder
1/2 tsp ground Cumin
1/4 tsp Cinnamon
juice of 1 Lime
salt & pepper

Directions:
In blender, combine onion, garlic, almond butter, water, broth, tomatoes, bread, hot sauce, cocoa powder, chili powder, cumin, cinnamon and lime juice. Blend until smooth, then transfer to saute pan. Bring to a simmer over medium heat, stirring often, and cook for 7-8 minutes. Taste, then season with salt & pepper.

If you are going to go ahead and use it for making Chicken Enchiladas, you may now add shredded cooked chicken to the sauce, Stir, warm it through, then spoon it in to tortillas. Roll and arrange on platter, and spoon more Mole sauce over the enchiladas. See photo.
