Breakfast Casserole


A co-worker gave me this recipe 20 years ago after bringing it to an office pot-luck. It is also known as Christmas Morning Wife Saver. So handy if you make it the night before, refrigerate it, then pop it in the oven the next morning. Christmas or not, it saves time in the morning and it's delicious!  This recipe serves from 6-8 (depending how hungry)! I have served it for brunches too, with a fruit salad on the side.

Ingredients:
16 slices white bread, crusts removed
slices of Canadian back bacon or ham
slices of sharp cheddar cheese
6 eggs
1/2 tsp salt
1/2 tsp pepper
1/2 tsp dry mustard
1/4 cup minced onion
1/4 cup green pepper, finely chopped
1 to 2 tsp Worcestershire sauce
3 cups whole milk
1/4 lb butter
some Special K or crushed Corn Flakes

Directions:
In a 9x13" buttered glass baking dish, put 8 piees of bread. Add pieces to cover entire dish. Cover bread with slices of bacon/ham, lay slices of cheddar on top of ham, and then cover with slices of bread to make it like a sandwich.
In a bowl, beat eggs, salt & pepper. Add dry mustard, onion, green pepper, Worcestershire and milk. Pour this over the "sandwiches". Cover and let stand in fridge overnight.
In the morning, melt 1/4 lb butter, pour over top. Cover with Special K or crushed Corn Flakes.
Bake, uncovered at 350 for one hour. Let sit 10 minutes before serving.
