Shaved Fennel, Peach & Grape Salad

You have to like Fennel to enjoy this refreshing and different salad. I served it to company the other night, and we thoroughly enjoyed it with our bbq ribs! Plus, lovely peaches are starting to hit the markets! 
                                   
Ingredients
  1 cup Shaved Fennel
  1 cup Sliced Peaches
  ½ cup Grapes
  1/2 cup Sliced Red Onion
  2 Tablespoon Olive Oil
  1 Teaspoon Lemon Juice
  Salt to taste
  Pepper to taste
  8 Mint leaves
Recipe Directions
1. Soak the fennel in water for about 15 minutes, so that it gets nice and crispy.
2. Then toss everything together in a bowl and season with salt and pepper to taste.
