Vanilla Roasted Figs with Honey Cream

Ingredients:
  • 8 fresh figs, halved
  • 3 tbsp clover honey
  • 2 tbsp brown sugar
  • pinch salt
  • 1 tsp vanilla
  • 1 tsp lemon zest
  • pinch fresh thyme
Directions:
Preheat oven to 400 degrees. Toss all of the above together in a bowl until combined. Transfer to a baking dish/pan. Cover with foil. Roast for 20 minutes.

Honey Cream
Ingredients:
  • 4 egg yolks
  • 1/3 cup clover honey
  • 2 cups whipping cream
Directions:
Combine the egg yolks and the honey in the top of a double boiler. Cook while whisking until thick. Remove from heat and strain (to remove any lumps or bits). Cover with plastic wrap (to prevent a skin forming) and refrigerate until ready to serve.
To serve:
Place a few tablespoons of honey cream in a dish and top with a few roasted fig halves and their juices.
