Dirty Diner Cheeseburger

Here's something a little different for all the burger-lovers! A lot of burger joints out there are doing crazy things with your ho-hum hamburgers.  I saw similar to this one on Diners, Drive-ins and Dives. I made them last night, and they were quite yummy! A fried egg on top might seem strange, but I hardly noticed it with all the other textures and flavors going on.


Ingredients:
For the cheeseburgers:
  • 1 lb (500 g) minced/ground beef
  • 1 cup (250 ml) onion, minced
  • 2 garlic cloves, pressed
  • 8 slices bacon
  • sea salt and ground black pepper
  • 4 eggs
  • 4 brioche buns
  • 4 slices American or Cheddar cheese
For the Dijonnaise:
  • 1 large white onion
  • 2 tbsp. (30 ml) butter
  • 1 cup (250 ml) 18 per cent cream
  • 3 tbsp. (45 ml) Dijon mustard
  • Pinch salt, ground black better, garlic, nutmeg, chopped fresh flat-leaf parsley and tarragon



Directions:
  1. First, make the Dijonnaise by finely chopping the white onion and frying with the butter in a medium saucepan. Add the cream and mix in the mustard. Season the mixture and simmer until the sauce takes a mustardy colour and is relatively thick. Refrigerate until ready to use.
  2. Mix together the minced/ground beef, minced onion and pressed garlic. Shape into patties and sprinkle with salt and pepper. Grill to your liking. (Health Canada calls for hamburger meat to be cooked to 160F/71C.) 
  3. In a medium frying pan/skillet, fry 8 slices of bacon and 4 eggs and set aside. 
  4. Cut a brioche bun in half and spread a layer of  Dijonnaise. Place a cooked patty on top, then a slice of cheese, followed by a fried egg, 2 slices of bacon and some chopped dill pickle. 
  5. Serve with hand-cut fries or a salad with ranch dressing.
