I have never had better than my ex-mother-in-laws! This recipe usually gives me approx. 22 large meatballs. And I bake them in a simple home-made tomato sauce.
Ingredients:
2 lbs. ground beef1 lb. ground pork
1 lb. ground veal
2 eggs, beaten
1/2 cup flat leaf Italian parsley, chopped
1 cup grated Romano or Parmesan cheese
1 tablespoon black pepper
1-1/2 tablespoons salt
4 cloves garlic, minced fine
1 cup day-old Italian bread, soaked in milk, squeezed, and torn into 1/2
inch pieces
Directions:
Combine ground beef, pork and veal in a large mixing bowl.
Soak day old Italian bread in milk until the milk is absorbed. Squeeze out as much of the milk as possible. Tear the bread into chunks and add to the meat mixture.
Add remaining ingredients in order and mix thoroughly.
Using the palms of the hands, form meatballs 2 to 2-1/2 inches in diameter.
Place in baking pan, cover with tomato sauce and bake at 350 degrees for 30-35 minutes.
