Panzanella (Tomato Bread Salad)



This Italian tomato and grilled bread salad is perfect for the summer when tomatoes and basil are at their freshest. You can add some chopped green onion if you’d like.
Serves: 4

Ingredients:

  • Quarter baguette 
  • 5 tbsp (75 mL)  Olive Oil 
  • 1 pkg (397 g)  Cocktail Duo Tomatoes (red & yellow), halved 
  • 1/2 tsp (2 mL) salt 
  • 1/4 tsp (1 mL) freshly ground black pepper 
  • 1 tsp (5 mL) red wine vinegar 
  • 1/4 cup (50 mL) torn fresh basil leaves 
  • 1/4 cup (50 mL) whole fresh parsley leaves
 
·     Instructions:
·     Preheat barbecue to medium heat.

Cut piece of baguette in half lengthwise, then slice crosswise into four pieces. Brush slices with 2 tbsp (25 mL) of the oil. Place baguette slices on grill; cook for 2 to 4 minutes per side or until toasted and slightly charred. Remove from grill. Cut into chunks.

In bowl, toss together baguette, tomatoes, salt and pepper. Drizzle with vinegar and remaining 3 tbsp (45 mL) oil; toss. Sprinkle with basil and parsley and serve immediately.
