Thank you to my cousin Susan, who picks her own wild blueberries for this delicious recipe! Of course you can use any fresh blueberries.
Ingredients:

8 slices sandwich bread

4 ounces cream cheese, softened
·
1 tsp fresh lemon juice
·
½ tsp lemon zest
·
½ tsp vanilla
·
1 Tablespoon powdered sugar
·
2 Tablespoon butter
·
¾ cup frozen wild
blueberries, thawed
Directions:
Combine cream cheese, powdered sugar, vanilla,
lemon juice and lemon rind. Heat frying pan over medium heat. Spread
cream cheese mixture on one slice of bread tope with blueberries and top with
second slice of bread. Butter the outside of both slices of bread. Cook until
golden, flip and cook on second side until desired colour. Remove from
heat and repeat with remaining sandwiches. I cook mine on sandwich griddle,
which allows me to cook 4 at a time.
Freezing Directions:
After cooking, allow sandwiches to cool.
Wrap each sandwich individually with plastic wrap and place into a freezer
bag. To serve: reheat in microwave for 30 seconds.
