Japanese Cucumber Salad




Dressing:
2 tblsp lime juice
1 ½ tsp sugar
¾ tsp salt
Fresh ground pepper
3 tblsp olive oil
Whisk in a bowl or shake in a jar until emulsified.


Wash cucumber and then, using the peeler, lightly shave off layers of cucumber in ribbons. (as shown in photo).
Place in a bowl and drizzle with the above dressing.
Sprinkling with sesame seeds is  an option.
You can also use carrots (same method) or a combination of the two.
