KitchenAid Artisan stand mixer

I am very lucky and thankful to have recently received the gift of my first Kitchen Aid stand mixer. I have coveted these beauties for many years! Well, I have to tell you, that this is one of the best things I have ever had in my kitchen. It's in my favorite color (green), is a beauty to look at, but most important- it is so easy to use and to clean!

I have been looking for any excuse to use it the past week. Yesterday I whipped some cream - hands-free! Today I am going to make some pizza dough. Of course it came with a small recipe book, which I will test out one day soon.

Just had to share this, and tell you - if you have been thinking of getting one for your kitchen, you won't be sorry!

Japanese Cucumber Salad

Dressing:

2 tblsp lime juice

1 ½ tsp sugar

¾ tsp salt

Fresh ground pepper

3 tblsp olive oil

Whisk in a bowl or shake in a jar until emulsified.

Wash cucumber and then, using the peeler, lightly shave off layers of cucumber in ribbons. (as shown in photo).

Place in a bowl and drizzle with the above dressing.

Sprinkling with sesame seeds is  an option.

You can also use carrots (same method) or a combination of the two.
